Juan Arbelaez is a young Columbian chef who arrived in Paris in 2008 with the dream to work with the best of the best. At first, he joined the team of Pierre Gagnaire before working in the kitchens of Eric Briffard at the George V. Juan continued his education with Eric Fréchon; mastery and accuracy [...] would become the key words of this period. In 2012, he was a contestant on French Top Chef where he met, amongst others, Jean Imbert. Juan would become the Chef de cuisine of Acajou, Imbert's restaurant, for nearly a year, an experience that allowed him to reaffirm his creativity. Juan puts that creativity to work today at Plantxa, his establishment in Boulogne Billancourt with a \"street art\" theme.
