When Patrick Bertron was a child, he delighted in his mother's farm-fresh cooking. He studied at Hotel Management School in Saint-Nazaire and then spent two summer seasons on the coast of Brittany. He furthered his training in Rennes, with Marc Tizon, and then joined Bernard Loiseau’s team, where he [...] cultivated his appreciation of top-quality ingredients. He took charge of the kitchens at La Côte d'Or in 2003, where he loves creating his "gourmandises": full-flavored tartines or spoonfuls placed on the edge of the plate that add a touch of originality to the dish.
