Clarify (1) / Separate (2)

(1) To leave a liquid clear and clean of impurities by filtering or decanting. Clarifying butter consists of heating it slowly in order to decant it. The milk solids sink to the bottom; the butterfat remains in the middle; and the lighter impurities float to the surface.(2) Separate is used for eggs. It refers to the process of separating the white from the yolk.
