Flash freeze

Flash freeze

Action of freezing food or mixtures very quickly at a very low temperature (between -30°C and -40°C). This food can be stored at -18ºC for a long duration, but this is not the only use. Flash freezing is used to allow for different preparations to be combined, worked, or decorated easily after hardening. For example, ganache or bavarois can be flash frozen.
