Make chocolate shavings (curls)

First, melt the chocolate in the microwave or over a bain-marie. Mix well, then spread out thinly over a baking sheet and place in the freezer for a few minutes. Another alternative is to spread out the chocolate over a baking sheet previously chilled in the freezer. Once the chocolate hardens, make curls by scraping the surface with a flat spatula or the tip of a flexible knife.
