Barbecue Sauce

Ingredients (1 people)
  • 200 g (7 oz) onions
  • 1 clove garlic
  • 8 g (0.28 oz/1 1/2 tbsp) salt
  • 40 g (1.41 oz/2 1/2 tbsp) muscovado sugar
  • 15 ml (1 tbsp) cider vinegar
  • 5 ml (1 tsp) Worcestershire sauce
  • 1 pinch cayenne pepper
  • 1 pinch paprika
  • 5 g (0.07 oz/scant 1/3 tsp) pepper
  • 6 g (0.21 oz/1 tbsp) cumin
  • 20 g (0.71 oz/3 1/3 tbsp) mustard seeds
  • 45 g (1.59 oz/scant 2 1/4 tbsp) molasses
  • 35 g (1.23 oz/1 2/3 tbsp) honey
  • 40 g (1.41 oz/2 tbsp) maple syrup
  • 1.5 l (6 1/3 cups) ketchup

Instructions

Peel and slice the onions. Peel and mince the garlic clove. In a saucepan, mix the onion slices with the garlic, salt, sugar, vinegar, Worcestershire sauce, cayenne pepper, and paprika. Sweat the onions over medium heat until soft. Transfer the mixture to a blender and blend on high speed to a creamy puree.

In the meantime, toast the black pepper, cumin, and mustard seeds in a skillet or frying pan, then grind to a fine powder in a food processor. Mix the ground spices and onion puree with the molasses, honey, and maple syrup. Add the ketchup and mix.
