Step 1: Green Beans

String the beans. Wash and drain them.

Step 2: Cooking

Bring a large amount of water to a boil (about 10 cups for every pound of vegetables).
 Add coarse salt to the water, measuring out 1 teaspoon for every 2 cups of water. Prepare a bowl of iced water and keep it nearby so that you can shock the vegetables. Also prepare a spider and a sieve to drain them. Immerse the beans in the boiling salted water. Do not add too many beans at a time. The water should never stop boiling. Cook uncovered as quickly as possible. 
Skim off any impurities if necessary. 
Check the level of cooking often, either by tasting or by pressing the beans gently between two fingers. They should still be crisp.
