Candied Seaweed

Ingredients

- 1 handful of seaweed
- 30 g (1 oz/2 tbsp) distilled white vinegar
- 200 g (7 oz/1 cup) superfine (caster) sugar
Instructions
Add the seaweed to the white vinegar to soak. When well-rehydrated, drain and combine with half of the sugar. Let dry for 30–40 minutes. When dry, remove the seaweed and combine it with the remaining sugar. Let dry for another 30–40 minutes.
Remove the seaweed from the sugar and put into a dehydrator for 12 hours.
