Candied Walnuts

Ingredients (4 people)
  • 2 1/8 ounce superfine sugar (60 g)
  • 2 1/8 ounce water (60 g)
  • Cayenne pepper
  • 12 walnuts


Step 1: Candied Walnuts

Set the oven to 250°F (120°C).

Combine the sugar and water in a saucepan and bring to a boil. Season with a pinch of salt and Cayenne pepper. Mix, then remove from heat.

Halve the walnuts and soak in the syrup for 20 minutes.

Line a baking sheet with parchment paper. Drain the walnuts and transfer to the baking sheet, separating the nuts.

Place the baking sheet in the oven for 35 minutes, until the walnuts are lightly caramelized. Transfer immediately to a container. The walnuts are ready to be used.
