Step 1: Choux Pastry Dough

To see our recipe for choux pastry dough, click here. Place the dough into a piping bag with a smooth tip.

Step 2: Chouquettes

Preheat the oven to 160°C. Lightly butter a baking sheet. Pipe 3.5cm puffs onto the sheet, spacing them at least 3cm apart from one another to make sure they cook evenly. Crack the egg into a bowl and beat it with a fork. Use a pastry brush to coat each of the puffs with egg, making sure not to get any onto the tray.
