Colored Sugar

Ingredients (1 people)
  • 1.2kg (2 lb 10 1/2 oz/6 cups) isomalt
  • 3 g (1/8 oz/1/2 tsp) cream of tartar
  • 45 g (1 1/2 oz/3 tbsp) water
  • 2 g (1/16 oz/3/8 tsp) powdered food coloring (red, orange, green, etc.)
  • 1g (1/32 oz/1/4 tsp) powdered gold


Dissolve the isomalt and cream of tartar in a saucepan. Color the water with the food coloring and powdered gold. Add to the saucepan and heat to 170°C (340°F).
