What could be simpler or quicker to make than a hot ham and cheese sandwich? This French classic is perfect just out of the oven with a small side salad.
Mix the crème fraîche, shredded Emmental, and shredded Parmesan in a bowl. Add the egg yolk. Season with freshly ground pepper. Butter one side of a slice of bread.
Lay over it in the following order : 1 slice of ham, 1 slice of Emmental, 1 slice of ham, 1 slice of Emmental. Top with a spoonful of the cream, then finish with the second slice of bread. Cover the second slice of bread with the cream. Place the sandwich on a grill under the broiler for 2-5 minutes. After 5 minutes, the croque monsieur is ready. Serve with a green salad.
