Cucumber and Apple Condiment
- 1 cucumber (300 g)
- 2 Granny Smith apples
- 2 tomatoes
- 1 small bunch cilantro
- 10 chives
- 2 lemons
- 1 teaspoon garam masala
- 1 teaspoon Espelette pepper
- 3 1/2 ounces plain yogurt (100 g)
Step 1: Condiment
Peel the cucumber, and cut it into small cubes. Place them into a sieve, sprinkle generously with salt, and leave for 15 to 20 minutes.
Peel and core 2 Granny Smith apples, and cut into small cubes.
Blanch and seed 2 tomatoes, and cut into a small dice.
Rinse the cilantro and chives, and pat dry. Remove the leaves from the cilantro, and chop this and the chives.
