Dried Fruit Condiment

Ingredients (4 servings)
  • 8 dried apricots
  • 8 dates
  • 4 dried figs
  • 2 oranges
  • 1 tablespoon honey
  • 1 teaspoon cumin seeds
  • 6 saffron threads
  • 5 tablespoons white balsamic vinegar


Step 1: Dried Fruit Condiment

Chop 8 dried apricots, 8 dates, and 4 dried figs into a brunoise.

With a vegetable peeler, remove the zest from 1 unwaxed orange, and immerse the zest in boiling water for 2 minutes.

Drain in a sieve, and cool immediately under the tap. Julienne the zest, and set aside.

Squeeze the juice of the orange, pour it into a small saucepan, and bring to a boil. Add the dried fruit brunoise, and mix. Take the saucepan off the heat and allow the mixture to soak for approximately 5 minutes.
