Ingredients (6 people)

Genoise

  • 6 eggs
  • 185 g sugar
  • 185 g flour
  • 40 g butter

Fraisier Cream

  • 25 cl milk
  • 3 egg yolks
  • 50 g sugar
  • 20 g custard powder
  • 200 g softened butter (pommade)

Fraisier

  • 750 g strawberries
  • 500 g white chocolate couverture
  • Powdered sugar
  • Berry coulis
  • Vanilla ice cream

Instructions

Step 1: Genoise

Preheat the oven to 200 °C. Butter and flour 1 or 2 genoise molds. Melt the butter. Sift the flour.

Combine the eggs and the sugar together over a double boiler. When the mixture reaches ribbon stage, remove a portion and mix it with the melted butter. Add the sifted flour, then fold together with the remaining egg and sugar mixture.
