Step 1: Tomatoes
Rinse and dry the tomatoes. Remove the stalks and cut in half.
Peel the garlic, and cut into thin slices.
Add a splash of olive oil to a large frying or sauté pan. Put in the tomato halves side by side and close together.
Cook first over a medium heat for around 15 minutes, and when they have exuded some juice, sprinkle with the slices of garlic.
After 15 minutes, lower the heat to minimum and continue to cook, allowing them to reduce and slightly caramelize.
Add salt and freshly ground black pepper at the end of cooking.
