Fruit Chutney

Ingredients (1 people)
  • 25 g (0.88 oz) Golden Delicious apple (about 1/4)
  • 30 g (0.88 oz) Granny smith apple (about 1/5)
  • 50 g (1.76 oz) mango (about 1/6)
  • 15 g (0.53 oz) date (about 2/3)
  • 5 g (0.18 oz/1 tsp) superfine (caster) sugar
  • 8 g (0.28 oz/1 1/2 tsp) sherry vinegar
  • 20 g (0.71 oz/4 tbsp) squab jus

Instructions

Cut the apples, mango, and date into large dice. Brown the apples in a dry saucepan for about 2 minutes. Add the mango, then the dates, and cook for another 2 minutes. Add the sugar, vinegar, and squab jus and confit for 2 hours over very low heat. Process in a food processor to a very smooth fruit puree.
