Infused Honey Syrup
- Zest of 1 grapefruit
- 2 teaspoons maple syrup
- 2 teaspoons honey
- 65 grams water
- 1 pink grapefruit
- 1 teaspoon lime juice
- 2 teaspoons honey syrup
- 60 grams tonic water
- 30 grams grapefruit juice
- 30 grams cranberry juice
- 60 grams gin
- 1 handful pomegranate seeds
- 1 sprig mint
- a few ice cubes
Instructions
Step 1: Infused Honey Syrup
Make the honey syrup. In a saucepan, combine the water, maple syrup, and honey. Stir over low heat until the honey melts. Increase the heat and allow to simmer for 5 minutes.
In the meantime, rinse the grapefruit, dry it off, and remove the zest. Add it to the syrup, mix, and allow to cool off the heat.
Place 3 ice cubes in a blender. Add the lime juice, the flesh of half the grapefruit, and the pomegranate seeds, and blend. Strain through a chinois.
Pour this mixture into a glass. Add the grapefruit juice, cranberry juice, tonic, gin, and strained syrup. Mix well to combine. Add a few more pomegranate seeds, a few mint leaves, and two ice cubes.
Finish by garnishing with a grapefruit wedge and a few more mint leaves. Drink cold.
Tips
You can add a bit of pepper or kaffir lime to this cocktail for even more flavor.
