Dry out the bread for 2 hours in a drying oven (or use dry bread). Use a serrated knife to remove the crust, then crush the bread finely in a food processor. Press through a drum sieve or fine-mesh strainer.
Pluck the parsley leaves from the stems, and dry the leaves well to remove any moisture. Chop in a food processor, then add the dry bread crumbs and blend for an additional 1 minute. Transfer the contents of the food processor bowl to a pan and let dry. Press through a drum sieve once more.
