Step 1: Do ahead : prepare the lentils and vegetables

Place the lentils into a strainer and rinse well under cold running water. Peel and wash the carrot and cut into pieces. Peel the shallots and prick with the cloves. Make a bouquet garni with the bay, thyme, and parsley.

Step 2: Cooking

Place the lentils into a large pot, and add the chicken stock. Add water until the lentils are covered by about 5 cm. Bring to a boil. Skin and add the shallots, carrot, bouquet garni, and ham. Cook for 20 minutes at a light simmer, skimming often. After 15 minutes, season lightly with salt.
