Whole Wheat Pasta with Broccoli and Daube
Step 1: Pasta
Remove and wash the broccoli florets. Reserve the stalks for a soup.
Boil the florets in salted water for just 3 minutes. Remove with a slotted spoon and immerse immediately in iced water.
Drain the florets and set them aside.
Don’t throw away the broccoli cooking water, you will need 2 1/3 cups (500 ml) of it for cooking the pasta.
Heat a splash of olive oil in a frying pan, add the pasta, and stir well. Then add half of the reserved broccoli cooking water, stir, and cook until absorbed. Add the remaining water, and cook the pasta until al dente.
