Lemon Paste
Ingredients

- 4 lemons
- 1 orange
- 50 g (1/76 oz/1/4 cup) sugar
- 2.5 g (0.09 oz/7/8 tbsp) agar-agar
- 50 g (3.53 oz) confit lemon
- 15 g (0.53 oz/2 tsp) lemon olive oil
Instructions
Juice the lemons and orange. Bring the juice to a boil in a saucepan with the sugar and agar-agar. Let cool. Process in a food processor, adding the lemon confit and lemon olive oil until you have a smooth, yellow paste. Set aside in a parchment (baking) paper cone.
