Step 1: Lobster

Cook the lobsters in water seasoned with salt, dried fennel, and black pepper.

Allow 2 minutes’ cooking time for the tails, 6 for the claws, and 3 for the knuckles. Be sure to cook the tails vertically.

Shell the claws, making sure to remove all cartilage, then shell the lobster tails, and devein.

Step 2: Lobster Roe Butter

Soften the butter, then mix with the roe, the creamy parts and the basil. Keep in a cool place.
