- 200 g (7 oz) lovage or chives
- 150 ml (2/3 cup) vegetable oil
Two days before use, blanch the lovage leaves in boiling water for 10 seconds, then shock immediately in ice water. When cold, drain well and lay them out on a dehydrator tray. Dry out overnight, about 10 hours, at 63°C (145°F). Blend the lovage or chives with the oil to produce a green oil. Chill 24 hours.
Transfer the lovage or chive oil to a fine conical strainer lined with a clean cloth and let filter into a container overnight. Refrigerate.
