  • two 400 g mackerel
  • 2 unwaxed oranges
  • 4 silverskin onions
  • 4 small fennel bulbs
  • 1 teaspoon coriander seeds
  • a splash olive oil
  • Salt
  • a teaspoon mignonette pepper
  • 12 coriander leaves


Serves 4

Gut two 400 g mackerel, fillet them and remove all the bones (or get your fishmonger to do it for you). Lay them on a dish.
