Beef Daube Marinade
Peel and wash the carrots and celery, then cut into diagonal rounds. Peel the onions and garlic. Cut the onions into small sections and crush the garlic. Slice the orange.
Combine the ingredients in a deep earthenware bowl. Add the peppercorns and thyme. Add the red wine followed by the meat, and marinate for 48 hours in the refrigerator. The marinade is ready to be cooked.
