My Homemade Ketchup
- 3 ripe tomatoes
- 1 1/4 inches ginger (3 cm)
- 1/2 lemongrass
- 1 1/2 ounces superfine sugar (40 g)
- 1 teaspoon Chinese Five Spice
- 2 tablespoons sherry vinegar
- 2 teaspoons honey
- 2 whole hot chiles (piri piri)
Instructions
Step 1: Ketchup
Blanch and deseed the tomatoes, carefully removing their juice and chopping them.
Peel and thinly slice the ginger and lemongrass.
Heat the sugar in a saucepan until it turns a light amber color. Add the tomatoes and stir well.
Cook for 2 to 3 minutes, then add the ginger, lemongrass, Chinese Five Spice, sherry vinegar, honey, and chiles. Simmer for 15 minutes, stirring frequently.
