Parisian Hot Chocolate

Step 1: Vanilla Cream

Pour the yogurt and heavy cream into a siphon. Seal well and shake. Insert a N2O gas charger, give it two good shakes, and set aside in the refrigerator.

Step 2: Mango Cream

Peel the mango. Pass the flesh through a juicer and collect the puree.
