Green Beans
- 800 g haricots verts (fine green beans)
- 2 lettuce hearts
- A few oven-dried tomatoes
- 3 medium button mushrooms
- 20 shelled fresh almonds
- Fleur de sel
- Pepper
Lemon Cream
- 20 cl heavy cream
- 1 shallot
- Juice of 1 lemon
- Salt
- Pepper
Instructions
Step 1: Green Beans
String the green beans, then cook them in boiling salted water for 10 minutes. Chill in ice water. Drain them and place them on a cloth. Wash the lettuce and remove it from the heart, then finely slice it and set aside.
Step 2: Lemon Cream
Peel and slice the shallot. Emulsify it with the cream in a mixing bowl. Add the salt, the pepper, and the lemon juice. Continue whisking it until it begins to thicken, then set aside.
