Pi-Pie : Number-Shaped Tarts
This pie, filled with vanilla mascarpone, is perfect for March 14 – or any other special occasion! Its shape can be varied to suit the event, whether it’s the birthday girl’s first initial or the birthday boy’s age. When garnishing, let creativity be your guide, adding fruit, mini meringues, or colored edible flowers, depending on the season.
Step 1: Tart Dough
Combine the flour, the ground almonds, the powdered sugar, and the beaten egg. Add the cold, diced butter, and knead until the dough is smooth.
Roll out the dough on a sheet of parchment paper to 3 mm of thickness. Cut into two identical pieces using a paper stencil.
Chill 30 minutes, then bake in a preheated, 180°C oven for 20 minutes. Remove from the oven and allow to cool completely.
Step 2: Mascarpone Cream and Plating
Pour the cold heavy cream into a bowl, and add the mascarpone, the sugar, and the vanilla beans. Beat until peaks form and place the whipped cream into a piping bag.
Pipe the cream onto the first tart base, then cover with the second. Pipe a second layer of cream on top, and garnish as you like, with fresh fruit, meringues, or edible flowers.
