Pumpkin Rice

Ingredients (4 servings)


Step 1: Rice

Preheat the oven to 350°F (180°C).

Peel the pumpkin and cut the flesh into 1/3 inch (1 cm) cubes. Dice the bacon.

Place them in an ovenproof dish with the olive oil and unpeeled, crushed garlic. Mix well and bake for 25 minutes.

Remove the dish from the oven, and sprinkle the rice over the top of the pumpkin. Return to the oven for 2 minutes.

Remove from the oven again, and add 1 1/2 times the volume of the rice in cold water to the dish. Return to the oven for 20 minutes, checking the rice regularly. If it is drying out too quickly, add a little more water.
