Sardines and Pan-Fried Potatoes
“An amusing demonstration of how seemingly humble ingredients can be no obstacle to creativity: take two of the most ordinary foods, marry them on a plate, and you have a little dish that is fit for a king.”
Peel the potatoes and cut each into a rectangle. The waxy red potatoes suggested for this dish will not fall apart when cooked.
Blanch the rectangles, then put in a shallow bowl. Add the crushed garlic cloves and bay leaves, and cover with olive oil. Cover the bowl with plastic wrap and cook in the microwave at 300 W for 7 minutes.
