Sautéed Shrimp in Salted Butter
Step 1: Shrimp
Rinse the shrimp under cold running water, and pat dry with a cloth.
Melt the salted butter in a large pan. Once it is nice and hot but not yet browned, add the live shrimp and sear over a high heat.
Cook the shrimp for 2 to 3 minutes, stirring frequently, and season with fleur de sel and pepper.
It is sometimes better to use 2 frying pans instead of one, so that each shrimp can come into contact with the surface of the pan.
Step 2: Plating
Add the crushed garlic, season with fleur de sel and freshly ground pepper, and serve immediately.
