Smoked Arctic Char

Ingredients (1 people)
  • 1 1.8-kilo (1 lb 12 ounce) fillet Arctic char
  • 400 g (14.10 oz/1 1/2 cups) coarse salt
  • 100 g (3.52 oz/7 tbsp) superfine (caster) sugar
  • Zest of 1/2 lemon
  • Zest of 1/2 orange
  • Zest of 1/2 lime
  • 1/2 tbsp fennel seeds, toasted and crushed
  • 1/2 tbsp coriander seeds, toasted and crushed


Put the fillet in a dish. Combine all of the other ingredients, and cover the fillet with the mixture. Cover with plastic wrap (cling film) and pickle in the refrigerator for about 3 hours. Rinse the fillet under cold running water, then dry well on paper towels. Cold smoke for 3 hours.
