Preheat the oven to 200°C.
Peel and halve the sweet potato. Cut into slices, then into matchsticks.
Cover a baking sheet with parchment paper and arrange the sweet potato fries over the top. Drizzle with olive oil. Sprinkle with the cumin and Espelette pepper.
Bake for 30-40 minutes. Five minutes before the fries are done, sprinkle with Parmesan.
