Melon cream and port reduction, vanilla ice cream

Step 1: Preparing the port reduction and fruit

Reduce the port wine until it reaches a syrupy consistency. Set aside.

Wash the strawberries and remove the stems; peel the melons. Cut the strawberries lengthwise into quarters and either dice the melons or make melon balls.

Step 2: Finish and presentation

Just before serving, combine and emulsify all the ingredients for the melon cream. Arrange the fruit on the bottom of a shallow dessert dish and cover with melon cream. Add a quenelle of vanilla ice cream. Drizzle port reduction around the dessert.
