This simple recipe is the perfect dip or spread to serve with cocktails: dollop it on crostini or serve it alongside crackers, breadsticks, or crudités. You could even spread it on bread and enjoy it as a simple vegetarian sandwich!

- 500 grams peas
- 4 mint leaves
- 50 grams pine nuts
- 3 tablespoons olive oil
- Juice of 1/2 lemon
- 1 clove garlic
- Salt
- Pepper
- 2 slices country bread

Step 1: Method
Cook the peas in a pot, then drain them. Combine the peas, peeled and split garlic clove, mint leaves, olive oil, and lemon juice in the blender. Season with salt and pepper, and blend well. Allow to cool before serving.
