Step 1: Potatoes

Peel and wash the potatoes. Immerse in a large pan filled with cold salted water. Bring to a boil and cook for 20–25 minutes. Drain the potatoes when cooked.

Step 2: Onions and Bacon

Peel and finely slice the onions. Cut the pork belly into lardons. Heat the butter in a skillet and sweat the onions for 5 minutes until they turn translucent. Add the lardons and cook for a few more minutes.

Step 3: Tartiflette

When the potatoes are cooked, drain them and slice them. Preheat the oven to 350 F (180°C) and grease a casserole dish with butter. Spread out half of the potatoes over the dish, add half of the onions and lardons, and top with half of the cheese. Repeat the operation until all of these ingredients are used up. Pour the cream over the top. Lightly season with pepper. Bake for 20 minutes until the cheese is fully melted. Serve hot with a green salad.
