Step 1: Making the sherbet

Combine water, sugar, glucose and sorbet stabilizer. Heat at 183°F (84°C), then chill to 39°F (4°C). Add lemon juice and fromage blanc without mixing excessively. Let sit. Process in the ice cream maker and set aside until needed.

Step 2: Preparing the strawberry juice

Add sugar to the strawberries and let stew in a double boiler for about one hour on low heat. Strain through a cheesecloth-lined chinois. Avoid mashing the fruit to make a clear juice.
