Generally the double boiler provides a water bath for warming preparations or directly cooking delicate products. The double boiler comes in various shapes and sizes, from a bowl placed over a casserole to professional services with several trays.

There are different models, with or without water, and capacity can vary, from a simple pan to equipment consisting of several gastronorm containers.

The bain-marie is used, as its French name indicates, for cooking over a bath of water: a process that involves placing one container inside a larger one containing boiling or simmering water. Limiting the heat in this way allows delicate products to be prepared without the risk of burning.
