Round instrument of varying forms; with or without a handle; made of stainless steel; plastic or wood; fitted with a concave; course or fine mesh made of metal or nylon. Used for sieving; sifting, draining and straining dry and moist ingredients.

The hoop frame of drum sieves can be made from stainless steel, plastic, or wood. Their diameter can range between 15 cm and 35 cm. The mesh, made either from stainless steel or nylon, comes in different sizes, identified by its gauge. The higher the number, the finer the pores for finer sifting. For instance:

  • No. 8 (i.e., 2.8 mm pore size)
  • No. 12 (i.e., 1.8 mm pore size)
  • No. 18 (i.e., 1.2 mm pore size)
  • No. 24 (i.e., 0.85 mm pore size)

Note: Professionals use electric sifters. They are equipped with a handle that controls the sifting action.
